Multicoloured granules the bees gathered across South East Melbourne, each colour a different flower. We collect only a small share, only in spring, and we don’t dry it — so what the bees packed in stays in. This is the closest thing to eating pollen straight off the frame.

Because it’s undried it holds more moisture, so it needs the fridge or freezer and it doesn’t keep as long as dried. That’s the trade for having it at its freshest. Roughly 20–25% protein, granular, faintly floral and faintly bitter — the taste shifts with the season’s flowers.

Fold it through yoghurt, blend it into a smoothie, or scatter it over fruit or muesli. Don’t cook it or stir it into anything hot — heat undoes the reason for eating it fresh.
