Multicoloured granules the bees gathered across South East Melbourne, gently dried so they keep at room temperature. No fridge, no rush — this is the easy one to live with, and the one to give as a gift or keep in the pantry.
Gentle drying trades a little of the fresh pollen’s moisture and delicate aromatics for months of shelf life. Roughly 20–25% protein, granular, faintly floral and faintly bitter, shifting with the flowers the bees worked.
Stir it through yoghurt, blend it into a smoothie, or scatter it over muesli, porridge or fruit. Don’t cook it — heat undoes the reason for eating it raw. Keep it sealed, cool and dry.
