Raw local honey from our rescued Melbourne hives — cold-extracted, unfiltered, and single-origin.
Cold-extracted by hand from fully capped frames only, then strained through a 400-micron sieve to remove wax and debris — kept unfiltered, so the pollen, enzymes and natural character stay in. Choose your size and your apiary: each bee yard forages a different corner of South East Melbourne, so no two taste quite the same.
You may notice tiny flecks of propolis — the bees’ own resin — a natural sign of honey that’s truly raw and unfiltered.
Every hive is kept chemical-free and stationary, the bees left on their own honey, in fully insulated hives — and the honey is bottled in glass, kept exactly as it came from the frame. That’s our whole standard, and we hold to every part of it: read it in full, hive to jar.
Lovely on toast, in tea, or stirred into a warm cup of honey water, made so the honey stays at its best.
